Healthy Lemon Loaf Recipe with Sourdough Discard, No Refined Sugar & A Creamy, Tangy Icing 🍋🍯

It may be below freezing in the Midwest, but it's feeling like spring in this house today with this recipe for healthy lemon loaf made with sourdough discard, no refined sugar, & a creamy, tangy icing! I needed a little burst of warmth and, of course, wanted to make a healthy dessert, so I am excited to share this recipe made with lemons, whole wheat and oat flour, greek yogurt, sourdough discard (replacement available), and sweetened with honey! A chunky slice of this is coming in at 200 calories and 7.5 grams of protein 😍 I use a kitchen scale when I bake to ensure accuracy and have less things to clean. 😉 It's so much more convenient for ingredients like honey, yogurt, and sourdough discard!

Ingredients:

Bread:

  • 100g oat flour (heaping 1 cup)

  • 120g whole wheat flour (1 cup)

  • 83g Greek yogurt (1/3 cup)

  • 80g sourdough discard (2/3 cup)

    • OR add 40g (1/3 cup) more wheat flour & 40g (3 tbsp) milk or water

  • 113g honey (1/3 cup)

  • 2 eggs

  • 1 tbsp lemon zest

  • 83g lemon juice (1/3 cup)

  • 1 tsp vanilla extract

  • 1/2 tsp baking soda


Greek Yogurt Icing:

  • 45g Greek yogurt (2.5 tbsp)

  • 8g milk (1/2 tbsp)

  • 5g lemon juice (1 tsp)

  • 15g honey (2 tsp)

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C).

2. Mix Ingredients:

  • In a large bowl, mix all the bread ingredients together until well combined.

3. Pour into Pan:

  • Pour the mixture into a parchment-lined pan. I used a 9x5 inch loaf pan.

4. Bake:

  • Bake for 28-30 minutes. Check for doneness at 28 minutes by inserting a toothpick into the center—it should come out clean.

5. Prepare Icing:

  • While the loaf is baking, mix the icing ingredients together in a bowl.

6. Apply Icing:

  • Pour the icing over the loaf while it’s still warm.

7. Serve:

  • Slice and serve!
