Ingredients for Sourdough Banana Bread Granola
Wet Ingredients
270g (1 cup) mashed banana (about 2–3 medium bananas)
160g (1/2 cup) sourdough discard
125g (1/2 cup) maple syrup
50g (3.5 tbsp) melted coconut oil
2 tsp vanilla extract
1/4 cup (48g) monkfruit sugar
1 tsp salt
2 tbsp cinnamon
1/2 tsp cloves
1/8 tsp nutmeg
Dry Ingredients
4 cups (360g) rolled oats
2 tbsp (16g) flaxseeds
1/2 cup (60g) chopped pecans
1/2 cup (45g) unsweetened coconut flakes
2/3 cup (60g) banana chips (optional, but adds extra crunch!)
Instructions
1. Prep the Oven & Baking Sheet
Preheat oven to 325°F (163°C). Line one large or two standard baking sheets with parchment paper.
2. Mix Dry Ingredients
In a large bowl, combine oats, flaxseeds, pecans, coconut flakes, and banana chips (if using). Set aside.
3. Combine Wet Ingredients
In another bowl, whisk together sourdough discard, mashed banana, maple syrup, melted coconut oil, monkfruit sugar, vanilla, salt, cinnamon, cloves, and nutmeg until smooth.
4. Combine Wet & Dry
Pour the dry mixture into the wet mixture and stir until everything is evenly coated and slightly sticky.
5. Spread & Bake
Spread granola into a thin, even layer on the prepared baking sheet(s). Bake for 30 minutes, stirring halfway through, until golden brown and fragrant.
6. Cool & Store
Remove from oven and let cool completely—it hardens as it cools! Transfer to an airtight container for up to a week.
