I love a gooey, moist, chocolatey dessert, but usually they come with a high sugar and calorie count. I was AMAZED when I first made this recipe for high protein, no refined sugar sourdough discard banana brownie bread (and have since tweaked it to perfection) at how healthy it was while still tasting decadent, fudgy, and sweet!

Ingredients for High Protein, No Refined Sugar Sourdough Discard Banana Brownie Chocolate Bread

Dry Ingredients:

  • 60g (1/2 cup) whole wheat flour

  • 30g (1 scoop) chocolate protein powder (preferably vegan - I love this organic one)

  • 58g (1/2 cup) cocoa powder

  • 3/4 tsp salt

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 40g (1/4 cup) Lily's chocolate chips


Wet Ingredients:

  • 165g (1 cup) sourdough starter

  • 140g (1/2 cup) 2% Greek yogurt

  • 85g (1/4 cup) honey

  • 2 tbsp monk fruit sweetener

  • 2 large eggs

  • 2 tsp vanilla extract

  • 250g (2-3 ripe bananas), mashed

  • 60ml (1/4 cup) brewed coffee


Chocolate Glaze:

  • 50g (~3 tbsp) Greek yogurt

  • 15g (~1 tbsp) honey

  • 2 tsp cocoa powder

  • 10g (~1/2 scoop) chocolate protein powder

  • 30ml (2 tbsp) milk


Instructions

  • Step 1: Preheat & Prepare   Preheat your oven to 350°F (175°C). Line an 8.5x4.5-inch or 9x5-inch loaf pan with parchment paper or grease a cast iron pan for even baking.


  • Step 2: Mix the Batter

    • Quick Method: In a large bowl, whisk together Greek yogurt, honey, monk fruit sweetener, eggs, and vanilla. Add mashed bananas, sourdough starter, brewed coffee, whole wheat flour, cocoa powder, salt, baking powder, and baking soda. Mix until fully combined. Fold in the chocolate chips.

    • Fermentation Method: Let the batter rest for 2 hours to allow the sourdough starter to ferment. If resting, add baking powder, baking soda, and chocolate chips after the 2-hour rest.


  • Step 3: Bake   Pour the batter into the prepared loaf pan and bake for ~45 minutes.


  • Step 4: Prepare the Glaze   While the bread is baking, whisk together Greek yogurt, honey, cocoa powder, protein powder, and milk until smooth.


  • Step 5: Cool & Glaze   Pour the chocolate glaze over the warm bread, then allow it to cool fully before slicing (I know, it's hard to wait!).
