Healthy Date-Sweetened Double Chocolate Cookies

Oil-free, refined sugar-free, and can be made gluten-free and dairy-free.   Makes about 15 Healthy Date-Sweetened Double Chocolate Cookies, but the recipe can easily be halved to make 7–8 cookies.

Ingredients for Healthy Date-Sweetened Double Chocolate Cookies

  • Pitted dates, packed – 2 cups (about 350 g)

  • Peanut butter – 2/3 cup + 3 tbsp (about 190 g)

  • Wheat flour – 2 cups (about 240 g) or Almond flour – 2.5 cups (about 250 g)

  • Cocoa powder – 8 tbsp (about 50 g)

  • Vanilla extract – 5 tbsp (about 75 ml)

  • Milk of choice – 8 tbsp (about 120 ml)

  • Salt – 1 tsp (about 6 g)

  • Baking soda – 1 tsp (about 5 g)

  • Cinnamon – 1/2 tsp (about 1.5 g)

  • Chocolate chips – 2/3 cup (about 115 g)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Add everything minus the chocolate chips to a food processor. A sturdy, large processor is a must for this recipe! If you don’t have one, blend the dates and milk first, then add the rest of the ingredients afterward.

  3. Pulse on high for a couple of minutes. Pause as needed to scrape the dough toward the blade. Continue pulsing until the dates are well chopped/blended and the ingredients are combined.

  4. Remove the blade and stir in the chocolate chips.

  5. Roll dough balls and place them on the parchment-lined sheet. This recipe makes about 15 large cookies.

  6. Flatten cookies slightly with your fingers, pressing down a little over halfway.

  7. Bake for about 10 minutes.

  8. Cool for 10 minutes. The cookies will be extremely soft when they come out but will firm up as they cool. A sprinkle of salt on top is highly recommended!
