These Sourdough Discard Crackers made with olive oil are the simplest, crunchiest, and most loved recipe to make the most out of your sourdough starter. I make these salty, crunchy crackers almost every time I feed Clint (my beloved starter 😉). Plus, they're made with just olive oil, starter, and seasonings—no butter! I highly recommend investing in a kitchen scale to measure your ingredients - especially when it comes to sourdough. Plus, you'll have less measuring cups to clean.
Ingredients:
100g sourdough discard
1 tbsp olive oil
1/8 tsp each or a generous sprinkle of sea salt, rosemary, herbs de provence, thyme, and sage
Flaky sea salt for topping
Instructions:
Preheat the Oven:
Preheat your oven to 325°F (160°C).
Mix Ingredients:
In a mixing bowl, combine your sourdough discard, olive oil, sea salt, rosemary, herbs de provence, thyme, and sage. Mix well until thoroughly combined.
Spread Onto Pan:
Spread the mixture onto a parchment-lined baking sheet using a spoon or spatula, smoothing it out evenly.
Sprinkle the top with flaky sea salt for an added crunch and flavor.
Bake Initial Time:
Bake in the preheated oven for 6 minutes.
Cut into Crackers:
Remove from the oven and cut the dough into crackers, whichever size you prefer. I use a pizza cutter.
Bake Final Time:
Return to the oven and bake for another 30 minutes, or until the crackers are golden and crisp.
Cool and Serve:
Remove from the oven and let the crackers cool for at least 5 minutes.
Place them in a bowl and enjoy!
