Healthy & Simple Sourdough Discard Banana Bread

Give this healthy and simple sourdough discard banana bread a whirl. This bread is moist, sweet without all the refined sugars, and free of seed and vegetable oils. Plus, it's made with oat flour.

Ingredients for healthy and simple sourdough discard banana bread

Ingredients:

  • 3 ripe bananas

  • 1/4 cup (48 grams) oil - olive, avocado, or coconut

  • 1/3 cup (113 grams) maple syrup or honey

  • 1 egg

  • 1/4 cup (62 grams) sourdough discard

  • 2 cups of oats grounded into 1 3/4 cup (350 grams) flour

  • 1 tsp baking soda

  • 1 tsp nutmeg

  • 1 tsp cloves

  • 1 tsp cinnamon

  • 1/3 cup (60 grams) chocolate chips - use these chocolate chips for zero sugar!


Instructions:

  • Preheat oven to 350 degrees

  • Mash bananas in a large, country mixing bowl with a fork

  • Add oil & honey or maple syrup (I like to measure the oil first and then measure the honey/maple syrup in the same cup so it slides right out)

  • Add egg and mix

  • Add sourdough discard and mix

  • Add oat flour, baking soda, nutmeg, cloves and cinnamon

  • Pour into 9x5 baking dish

  • Bake for 35-40 minutes


When it’s done, take it out and let it cool. Slice it up and enjoy your homemade, healthy sourdough discard bread.
