Healthy & Simple Sourdough Discard Banana Bread

Give this healthy and simple sourdough discard banana bread a whirl. This bread is moist, sweet without all the refined sugars, and free of seed and vegetable oils. Plus, it's made with oat flour.


Ingredients:
- 3 ripe bananas 
- 1/4 cup (48 grams) oil - olive, avocado, or coconut 
- 1/3 cup (113 grams) maple syrup or honey 
- 1 egg 
- 1/4 cup (62 grams) sourdough discard 
- 2 cups of oats grounded into 1 3/4 cup (350 grams) flour 
- 1 tsp baking soda 
- 1 tsp nutmeg 
- 1 tsp cloves 
- 1 tsp cinnamon 
- 1/3 cup (60 grams) chocolate chips - use these chocolate chips for zero sugar! 
Instructions:
- Preheat oven to 350 degrees 
- Mash bananas in a large, country mixing bowl with a fork 
- Add oil & honey or maple syrup (I like to measure the oil first and then measure the honey/maple syrup in the same cup so it slides right out) 
- Add egg and mix 
- Add sourdough discard and mix 
- Add oat flour, baking soda, nutmeg, cloves and cinnamon 
- Pour into 9x5 baking dish 
- Bake for 35-40 minutes 
When it’s done, take it out and let it cool. Slice it up and enjoy your homemade, healthy sourdough discard bread.
