If you remember those big, soft pretzels you get at hockey rinks being the best, you're going to love these Sourdough Discard Pretzel Bites! Buttery and pillowy, these bites are reminiscent of the classic treat but with a gourmet, fresh twist. They're perfect for snacking, sharing, or serving at your next gathering. Plus, they make excellent use of sourdough discard, so nothing goes to waste! If you're looking to get into sourdough, check out my instructions for growing a sourdough starter from scratch.


I highly recommend investing in a kitchen scale to measure your ingredients - especially when it comes to sourdough! Plus, you'll have less measuring cups to clean.

Ingredients:

Dough:

  • 7g active-dry yeast

  • 150g whole milk, warmed

  • 25g brown sugar

  • 75g sourdough discard

  • 240g bread flour

  • 4g salt

  • 14g (1 tbsp) unsalted butter

Baking Soda Bath:

  • 452g hot water

  • 10g baking soda

Topping:

  • 7g pretzel salt

  • 56g (4 tbsp) unsalted butter


Instructions:

Bloom the Yeast:

  1. Whisk the yeast into the warm milk and brown sugar. Cover with plastic wrap and let the yeast activate for at least 10 minutes or until foamy and fragrant.

Make the Dough:

  1. Whisk the sourdough discard into the yeast mixture.

  2. Fold the dry ingredients (bread flour, salt, and butter) into the wet mixture using a spatula or your hands until no traces of flour remain.

  3. Continue kneading with your hands for 5-10 minutes until you have a cohesive, smooth dough.

Pre-shape the Dough:

  1. Divide the dough into 5 even portions and roll them into balls. Cover with plastic wrap and let the dough balls rest for 15 minutes.

Prep & Shape:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. Roll each dough ball into an 18-inch rope and cut into 1.5-inch segments.

  3. Place the dough bites on the prepared baking sheet and freeze for 15 minutes.

Baking Soda Bath:

  1. Dissolve the baking soda in boiling water.

  2. Drop a handful of dough bites into the water and fish them out when they rise to the surface. Place the bites on the parchment-lined baking sheet about one inch apart.

  3. Sprinkle with pretzel salt.

Bake and Serve:

  1. Bake in the preheated oven for 10-15 minutes or until golden brown.

  2. Remove from the oven and dip each piece into a bowl of melted butter until fully coated.

Store:

  1. Keep any leftover bites in an airtight container for up to 3 days at room temperature or a 2 weeks in the fridge.
