This High Protein Cottage Cheese & Marinara Pasta Bake is a delightful and nutritious meal that’s packed with protein and flavor. Perfect for a family dinner or meal prep!

Ingredients:
2 pounds (908g) lean ground beef, seasoned with 1 tbsp Italian seasoning
1 medium onion, chopped
300g (approximately 3 cups) chickpea pasta, dry
1/2-1 tbsp olive oil
4 tsp (8g) garlic, minced
5 cups (150g) baby spinach
2 cups (500g or 17 oz) cottage cheese, 2%MF
1.5 cups (375g) marinara (or other tomato sauce)
1/4 cup (28g) shredded mozzarella
1/4 cup (25g) parmesan cheese
Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C). Bring a large pot of water to a boil.
Cook the Pasta: Cook the chickpea pasta to al dente, according to package instructions. Drain when finished.
Prepare the Beef and Vegetables: Meanwhile, add 1/2 tbsp olive oil, minced garlic, and chopped onions to a large pan. Add the seasoned ground beef and cook until browned. Then add the baby spinach and cook until wilted. Remove from heat.
Assemble the Bake: In a large baking dish, combine the cooked pasta, cooked onions, beef & spinach mixture, cottage cheese, and marinara sauce. Season generously with salt and pepper, then stir everything together until well-combined.
Add the Cheese: Sprinkle shredded mozzarella and parmesan cheese evenly over the top, coating the pasta.
Bake: Place the baking dish in the preheated oven and bake for 20 minutes, or until the top layer of cheese is melted and nicely browned.
