🛒 Ingredients for Zesty Buffalo Chicken Pasta Salad (High-Protein & Summer-Ready)

  • 8 oz dry pasta (bowtie or fusilli recommended)

  • 2 lb packed shredded chicken

  • 1 cup shredded carrots (95g)

  • 1 cup diced celery (120g)

  • 1 cup diced bell pepper (130g)

  • 1/4 cup chopped parsley

  • 2 tbsp lemon juice

  • Salt and pepper, to taste


Buffalo Cheese Dressing:

  • 3/4 cup Greek yogurt

  • 3/4 cup feta cheese crumbles

  • 1/4 cup hot sauce

  • Salt and pepper, to taste


👩‍🍳 Instructions

  1. Cook Pasta:   Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside to cool.

  2. Prep Veggies & Sauce:   Shred/chop carrots, dice celery and bell pepper, chop parsley. In a bowl, mix Greek yogurt, feta crumbles, hot sauce and salt/pepper until smooth and creamy.

  3. Assemble Salad:   In a large mixing bowl, combine pasta, shredded chicken, veggies, and dressing. Stir well. Finish with parsley and lemon juice.
