🛒 Ingredients for Zesty Buffalo Chicken Pasta Salad (High-Protein & Summer-Ready)
8 oz dry pasta (bowtie or fusilli recommended)
2 lb packed shredded chicken
1 cup shredded carrots (95g)
1 cup diced celery (120g)
1 cup diced bell pepper (130g)
1/4 cup chopped parsley
2 tbsp lemon juice
Salt and pepper, to taste
Buffalo Cheese Dressing:
3/4 cup Greek yogurt
3/4 cup feta cheese crumbles
1/4 cup hot sauce
Salt and pepper, to taste
👩🍳 Instructions
Cook Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain and set aside to cool.
Prep Veggies & Sauce: Shred/chop carrots, dice celery and bell pepper, chop parsley. In a bowl, mix Greek yogurt, feta crumbles, hot sauce and salt/pepper until smooth and creamy.
Assemble Salad: In a large mixing bowl, combine pasta, shredded chicken, veggies, and dressing. Stir well. Finish with parsley and lemon juice.
Chill & Serve: Let it sit in the fridge for 30+ minutes so the flavors meld. Serve cold and enjoy that spicy, creamy, crunchy perfection.
