Ingredients for High-Protein Cottage Cheese Lasagna (Serves 6)

Meat Mixture

  • 3 tsp minced garlic

  • 1.5 lbs lean ground turkey or beef

  • 1 tsp oregano

  • 1 tsp Italian seasoning

  • 1 tsp paprika

  • ½ tsp chili powder

  • ½ tsp salt

  • ½ tsp pepper

  • 4 cups (32 oz) marinara

Filling

  • 16 oz cottage cheese

  • 2 eggs

  • ½ cup grated Parmesan cheese

  • ½ tsp oregano

  • ½ tsp Italian seasoning

  • ½ tsp salt

  • ¼ tsp pepper

Lasagna Layers

  • 6 gluten-free lasagna noodles

  • 1 cup shredded cheese (mozzarella, cheddar, or a mix like Dubliner & cheddar)

Instructions

1. Prepare the Filling

In a bowl, combine eggs, cottage cheese, Parmesan, and spices. Stir until fully incorporated. Set aside.


2. Cook the Meat & Sauce

  1. Preheat oven to 375°F (190°C).

  2. Spray a 9x13-inch baking dish with olive oil.

  3. In a wok or skillet, cook ground turkey/beef with minced garlic until fully browned.

  4. Stir in seasonings and marinara sauce, and let simmer for 5 minutes.


3. Assemble the Lasagna

  1. Spread ¼–⅓ of the meat mixture at the bottom of the baking dish.

  2. Layer lasagna noodles over the meat sauce.

  3. Sprinkle ½ cup shredded cheese evenly across the noodles.

  4. Spread all of the cottage cheese filling over the top.

  5. Add the remaining meat mixture, spreading evenly.

  6. Top with the remaining ½ cup of shredded cheese.

  7. Sprinkle with fresh parsley if desired.


4. Bake & Serve

  1. Bake for 35-40 minutes, until the cheese is golden and bubbling.

  2. Let lasagna rest for 10 minutes before slicing and serving.
