Ingredients for High-Protein Cottage Cheese Lasagna (Serves 6)
Meat Mixture
3 tsp minced garlic
1.5 lbs lean ground turkey or beef
1 tsp oregano
1 tsp Italian seasoning
1 tsp paprika
½ tsp chili powder
½ tsp salt
½ tsp pepper
4 cups (32 oz) marinara
Filling
16 oz cottage cheese
2 eggs
½ cup grated Parmesan cheese
½ tsp oregano
½ tsp Italian seasoning
½ tsp salt
¼ tsp pepper
Lasagna Layers
6 gluten-free lasagna noodles
1 cup shredded cheese (mozzarella, cheddar, or a mix like Dubliner & cheddar)
Instructions
1. Prepare the Filling
In a bowl, combine eggs, cottage cheese, Parmesan, and spices. Stir until fully incorporated. Set aside.
2. Cook the Meat & Sauce
Preheat oven to 375°F (190°C).
Spray a 9x13-inch baking dish with olive oil.
In a wok or skillet, cook ground turkey/beef with minced garlic until fully browned.
Stir in seasonings and marinara sauce, and let simmer for 5 minutes.
3. Assemble the Lasagna
Spread ¼–⅓ of the meat mixture at the bottom of the baking dish.
Layer lasagna noodles over the meat sauce.
Sprinkle ½ cup shredded cheese evenly across the noodles.
Spread all of the cottage cheese filling over the top.
Add the remaining meat mixture, spreading evenly.
Top with the remaining ½ cup of shredded cheese.
Sprinkle with fresh parsley if desired.
4. Bake & Serve
Bake for 35-40 minutes, until the cheese is golden and bubbling.
Let lasagna rest for 10 minutes before slicing and serving.
