Ingredients for High-Protein Cottage Cheese Lasagna (Serves 6)
Meat Mixture
- 3 tsp minced garlic 
- 1.5 lbs lean ground turkey or beef 
- 1 tsp oregano 
- 1 tsp Italian seasoning 
- 1 tsp paprika 
- ½ tsp chili powder 
- ½ tsp salt 
- ½ tsp pepper 
- 4 cups (32 oz) marinara 
Filling
- 16 oz cottage cheese 
- 2 eggs 
- ½ cup grated Parmesan cheese 
- ½ tsp oregano 
- ½ tsp Italian seasoning 
- ½ tsp salt 
- ¼ tsp pepper 
Lasagna Layers
- 6 gluten-free lasagna noodles 
- 1 cup shredded cheese (mozzarella, cheddar, or a mix like Dubliner & cheddar)  
Instructions
1. Prepare the Filling
In a bowl, combine eggs, cottage cheese, Parmesan, and spices. Stir until fully incorporated. Set aside.
2. Cook the Meat & Sauce
- Preheat oven to 375°F (190°C). 
- Spray a 9x13-inch baking dish with olive oil. 
- In a wok or skillet, cook ground turkey/beef with minced garlic until fully browned. 
- Stir in seasonings and marinara sauce, and let simmer for 5 minutes. 
3. Assemble the Lasagna
- Spread ¼–⅓ of the meat mixture at the bottom of the baking dish. 
- Layer lasagna noodles over the meat sauce. 
- Sprinkle ½ cup shredded cheese evenly across the noodles. 
- Spread all of the cottage cheese filling over the top. 
- Add the remaining meat mixture, spreading evenly. 
- Top with the remaining ½ cup of shredded cheese. 
- Sprinkle with fresh parsley if desired. 
4. Bake & Serve
- Bake for 35-40 minutes, until the cheese is golden and bubbling. 
- Let lasagna rest for 10 minutes before slicing and serving.
