Ingredients for High-Protein Chicken & Sweet Potato Pasta with Spinach & Cheese Sauce

Main Ingredients:

  • 215g (~8oz) chickpea pasta (about 2 cups dry)

  • 600g (~3 medium) chicken breasts, cooked and diced (seasoned with salt & pepper)

  • 1 large sweet potato (~200g), cubed (drizzled with 1 tsp olive oil and air-fried)

  • 100g (~3.5oz / 1½ cups) spinach, wilted in a pan

Creamy Sauce:

  • 240g (~1 cup) cottage cheese

  • 50g (~1/2 cup) parmesan cheese, grated

  • 100g (~1/2 cup) milk of choice

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp oregano

  • 1 tsp parsley

Instructions

Step 1: Prep the Chicken & Sweet Potatoes

  • Dice the chicken breasts into bite-sized pieces and season with salt & pepper. Cook the chicken in a pan over medium heat until fully cooked (~7-10 minutes). Use olive oil as necessary.

  • Cube the sweet potato and drizzle with 1 tsp olive oil. Air-fry at 400°F (200°C) for 12 minutes, or until crispy and tender.

Step 2: Cook the Pasta & Wilt the Spinach

  • Cook the chickpea pasta according to package instructions until al dente.

  • Wilt the spinach in a pan on the stovetop for 2 minutes, until soft.

Step 3: Make the Creamy Sauce

  • In a blender, combine wilted spinach, cottage cheese, milk, parmesan, garlic powder, onion powder, oregano, and parsley.

  • Blend for 30 seconds, or until smooth and creamy.

Step 4: Combine Everything

  • Drain the pasta and return it to the pot.

  • Add the spinach & creamy sauce, then stir until evenly coated.

  • Fold in the cooked chicken and air-fried sweet potatoes, mixing everything together.

Step 5: Serve & Enjoy

  • Divide the pasta into 4 servings, ensuring each portion gets a balanced mix of protein, carbs, and sauce.

  • Enjoy warm and feel nourished, satisfied, and fueled!
