Ingredients for High-Protein Chicken & Sweet Potato Pasta with Spinach & Cheese Sauce
Main Ingredients:
215g (~8oz) chickpea pasta (about 2 cups dry)
600g (~3 medium) chicken breasts, cooked and diced (seasoned with salt & pepper)
1 large sweet potato (~200g), cubed (drizzled with 1 tsp olive oil and air-fried)
100g (~3.5oz / 1½ cups) spinach, wilted in a pan
Creamy Sauce:
240g (~1 cup) cottage cheese
50g (~1/2 cup) parmesan cheese, grated
100g (~1/2 cup) milk of choice
2 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp parsley
Instructions
Step 1: Prep the Chicken & Sweet Potatoes
Dice the chicken breasts into bite-sized pieces and season with salt & pepper. Cook the chicken in a pan over medium heat until fully cooked (~7-10 minutes). Use olive oil as necessary.
Cube the sweet potato and drizzle with 1 tsp olive oil. Air-fry at 400°F (200°C) for 12 minutes, or until crispy and tender.
Step 2: Cook the Pasta & Wilt the Spinach
Cook the chickpea pasta according to package instructions until al dente.
Wilt the spinach in a pan on the stovetop for 2 minutes, until soft.
Step 3: Make the Creamy Sauce
In a blender, combine wilted spinach, cottage cheese, milk, parmesan, garlic powder, onion powder, oregano, and parsley.
Blend for 30 seconds, or until smooth and creamy.
Step 4: Combine Everything
Drain the pasta and return it to the pot.
Add the spinach & creamy sauce, then stir until evenly coated.
Fold in the cooked chicken and air-fried sweet potatoes, mixing everything together.
Step 5: Serve & Enjoy
Divide the pasta into 4 servings, ensuring each portion gets a balanced mix of protein, carbs, and sauce.
