These bars are made without marshmallow fluff and go straight for the real deal—actual marshmallows that melt into golden, sticky perfection. Ingredients for Gluten Free S'mores Bars

  • 1½ cups coconut palm sugar or light brown sugar (300 g)

  • ½ cup coconut oil (105 g)

  • 1½ teaspoons vanilla extract (7.5 ml)

  • 3 tablespoons water (45 ml)

  • 2¾ cups oat flour (275 g)

  • 2¼ teaspoons aluminum-free baking powder (9 g)

  • ½ teaspoon fine sea salt (3 g)

  • 7 ounces chocolate, chopped or chips (200 g)

  • 1½ cups marshmallows (75 g)

  • 1 cup chopped nuts, optional (120 g)


Instructions

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.

  2. Cream together the coconut oil and sugar until smooth. Add vanilla and water, mixing until combined.

  3. In a separate bowl, whisk together oat flour, baking powder, and salt.

  4. Gradually add dry ingredients to the wet mixture with mixer on low. Increase speed slightly once flour is incorporated. If dough feels dry, add a splash more water.

  5. Divide dough in half. Press one half into the parchment-lined pan. Lift it out (with parchment) and set aside.

  6. Line pan with fresh parchment and press remaining dough into the bottom.

  7. Layer chocolate, marshmallows, and nuts evenly over the dough.

  8. Flip reserved dough over the filling, press down gently, and peel away parchment.

  9. Bake for 20 minutes. Let cool completely at room temperature—at least 2 hours—before slicing into 9 squares.
