  • 1 cup (200g) brown sugar

  • ½ cup (113g) butter, very softened

  • ¼ cup (85g) molasses

  • 2 eggs (100g)

  • 1 tsp (5g) pure vanilla extract

  • ¾ tsp (4.5g) salt

  • 1 cup (120g) gluten-free all-purpose flour

  • 1 tsp (2g) ground ginger

  • 1 tsp (2g) ground cinnamon

  • ½ tsp (1g) ground cloves

  • ½ tsp (2g) baking powder

  • ½ cup (85g) chocolate chips (optional)

For the Cream Cheese Frosting

  • ½ cup (1 stick) unsalted butter, softened (113g)

  • 8 oz brick-style cream cheese, softened (226g)

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 4 cups powdered sugar (500g)

Brownies

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch glass pan with non-stick aluminum foil or parchment paper.

  2. In a large bowl, cream together the brown sugar, softened butter, and molasses until smooth.

  3. Add eggs, vanilla extract, and salt. Mix until well combined.

  4. In a separate medium bowl, whisk together the gluten-free flour, ginger, cinnamon, cloves, and baking powder.

  5. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.

  6. Pour the batter into the prepared pan and smooth the top.

  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.

  8. Let brownies cool completely in the pan before frosting.

Cream Cheese Frosting

  1. In the bowl of a stand mixer (or using a hand mixer), beat the softened butter and cream cheese until creamy and lump-free.

  2. Add vanilla extract and salt; mix well.

  3. With the mixer on low speed, gradually add powdered sugar until fully combined and smooth.

  4. Once brownies are completely cool, spread frosting evenly over the top. For extra holiday flair, sift powdered sugar over the frosted brownies or add a sprinkle of cinnamon.
