Sourdough Cinnamon Swirl Sandwich Bread Recipe

Ingredients:

  • 150g active sourdough starter

  • 320g warm water

  • 10g fine sea salt

  • 25g honey

  • 20g olive oil

  • 500g bread flour

  • Filling: 3 teaspoons ground cinnamon + 1/4 cup brown sugar


Instructions:

1. Mixing the Dough:

  • In a large mixing bowl, combine the sourdough starter, warm water, honey, olive oil, and salt.

  • Gradually add the bread flour, stirring until a shaggy dough forms.

  • Cover the bowl with a damp cloth and let it rest for 1 hour.


2. Stretch and Folds:

  • Perform a series of stretch-and-folds every 20-30 minutes for a total of 4 times.

  • This helps develop gluten and strengthens the dough.


3. Fermentation:

  • Choose one of the following options:

    • Room Temperature Fermentation (4-6 hours): Leave the dough covered at room temperature.

    • Cold Fermentation (12-24 hours): Place the covered dough in the refrigerator.


4. Shaping and Swirling:

  • Gently stretch the dough into a large rectangle on a floured surface.

  • Sprinkle the cinnamon sugar mixture evenly over the dough.

  • Fold half of the dough onto itself and sprinkle more of the cinnamon sugar mixture. Then fold the other side over, sprinkling the rest of the mixture. You should have a long narrow rectangle.

  • Roll up the dough tightly from the bottom, pinching and tucking the ends under to seal.


5. Final Rise:

  • Place the rolled dough seam-side down in a greased loaf pan.

  • Cover with a damp towel or plastic wrap and let it rise in a warm place until doubled (usually 1-2 hours).


6. Baking:

  • Preheat your oven to 400°F (200°C).

  • Optionally, slash the top of the loaf with a sharp knife.

  • Bake for 35-40 minutes until golden brown and crusty.

  • Tap the top of the loaf—if it sounds hollow, it's done!


7. Cooling and Enjoying:

  • Remove the bread from the pan and let it cool on a wire rack.

  • Slice warm and enjoy with butter or your favorite sandwich fillings.
