  • 100g sourdough starter

  • 300g water

  • 50g honey

  • 20g extra virgin olive oil

  • 500g all-purpose flour

  • 10g sea salt

Instructions:

Step 1: Combine Ingredients   In a large mixing bowl, whisk together the water and sourdough starter until combined. Add honey, extra virgin olive oil, flour, and sea salt. Use a dough whisk or wooden spoon to mix until the flour is fully incorporated, and no dry bits remain. Cover and let the dough rest for 40 minutes.

Step 2: First Stretch and Fold   Uncover the dough and perform a stretch and fold. Stretch one edge of the dough about 4 inches, fold it toward the center, and rotate the bowl a quarter turn. Repeat until you’ve made a full rotation. Cover and let the dough rest for another 30 minutes.

Step 3: Second Stretch and Fold   Repeat the stretch-and-fold process. Then, cover the bowl completely and let the dough bulk ferment at room temperature for about 8 hours (at 68°F). Note: Fermentation may proceed faster in a warmer environment.

Step 4: Prepare the Loaf Pan   Spray or grease a 9x5-inch loaf pan, or line it with parchment paper for easy removal.

Step 5: Shape the Dough   Lightly flour your countertop and gently remove the dough from the bowl. Shape it into a rectangle, stretch it slightly, and roll it up into a log. Place the dough into the prepared 9x5-inch loaf pan.

Step 6: Final Proof   Cover the pan with a towel and let the dough proof at room temperature for 2-4 hours, or until it rises to just above the rim of the pan.
