Instructions:

Use a dough whisk or wooden spoon to mix until the flour is fully incorporated, and no dry bits remain. Cover and let the dough rest for 40 minutes.
Step 2: First Stretch and Fold Uncover the dough and perform a stretch and fold. Stretch one edge of the dough about 4 inches, fold it toward the center, and rotate the bowl a quarter turn. Repeat until you’ve made a full rotation. Cover and let the dough rest for another 30 minutes.
