Ingredients for Protein Pesto Chicken Pizza:

Dough:

  • 180g (1 1/2 cups) freshly milled flour or Bob's Red Mill whole wheat flour

  • 60g (1/4 cup) sourdough starter discard (optional)

  • 240g (1 cup) Greek yogurt

  • 1.5 tsp baking powder

  • 0.5 tsp salt

Toppings:

  • 50g (1/4 cup) basil pesto

  • 113g (1/2 cup) 2% cottage cheese

  • 52g (2 oz) mild or sharp cheddar cheese, shredded

  • 1/4 cup (28g) mozzarella cheese, shredded

  • 1/4 cup (38g) feta cheese

  • 60g (2 cups) spinach

  • 1 pound chicken breast, diced and cooked (seasoned with garlic powder, salt, and pepper)

Instructions:

  1. Preheat the Oven: Preheat your oven to 425°F (220°C).

  2. Prepare the Dough: In a bowl, combine the freshly milled flour (or whole wheat flour), optional sourdough discard, Greek yogurt, baking powder, and salt. Knead until it forms a dough ball.
