I received a request to create healthy, low-calorie, and no-refined-sugar versions of white chocolate peanut butter cups. These have a smooth, sweet, and salty filling with a crunchy chocolate outer layer. You will love grabbing them from your fridge when you need a sweet treat!

Ingredients 📝
Lily’s white chocolate bar (4 oz)
Oat flour (2 tbsp, 13g)
Natural peanut butter (⅔ cup, 150g)
Greek yogurt (4 tbsp)
Instructions 🔍
Base Layer:
Melt 2 oz of white chocolate and, moving quickly, pour into 18 mini muffin tins, surrounding the sides.
Put in the freezer to chill.
Peanut Butter Filling:
In a bowl, mix the natural peanut butter and oat flour well.
Add 1 tbsp of Greek yogurt and combine thoroughly.
Assemble Cups:
Remove the chilled white chocolate cups from the freezer.
Distribute the peanut butter filling evenly into each cup.
Top Layer:
Melt the remaining 2 oz of white chocolate and pour over each cup to cover the peanut butter filling completely.
Final Chill:
Refrigerate until firm.
