I received a request to create healthy, low-calorie, and no-refined-sugar versions of white chocolate peanut butter cups. These have a smooth, sweet, and salty filling with a crunchy chocolate outer layer. You will love grabbing them from your fridge when you need a sweet treat!

Ingredients 📝

  • Lily’s white chocolate bar (4 oz)

  • Oat flour (2 tbsp, 13g)

  • Natural peanut butter (⅔ cup, 150g)

  • Greek yogurt (4 tbsp)

Instructions 🔍

  1. Base Layer:

    • Melt 2 oz of white chocolate and, moving quickly, pour into 18 mini muffin tins, surrounding the sides.

    • Put in the freezer to chill.

  2. Peanut Butter Filling:

    • In a bowl, mix the natural peanut butter and oat flour well.

    • Add 1 tbsp of Greek yogurt and combine thoroughly.

  3. Assemble Cups:

    • Remove the chilled white chocolate cups from the freezer.

    • Distribute the peanut butter filling evenly into each cup.

  4. Top Layer:

    • Melt the remaining 2 oz of white chocolate and pour over each cup to cover the peanut butter filling completely.

  5. Final Chill:

    • Refrigerate until firm.

  6. Enjoy:

    • Store the cups in the fridge and enjoy your sweet treat!
