Ingredients:

Wet Ingredients:

  • ½ cup (120g) sourdough discard

  • ⅓ cup (80g) unsweetened applesauce

  • ⅓ cup (75g) honey

  • 1 tbsp (15g) vanilla extract

  • 1 large egg (50g)

Dry Ingredients:

  • ⅓ cup (40g) cocoa powder

  • 45g (1½ scoops) vegan chocolate protein powder

  • ½ tsp baking soda

  • ½ tsp salt

  • Optional: ½ cup (80g) chopped dark chocolate

Instructions:

  1. Preheat the Oven:   Preheat your oven to 350°F (175°C). Line an 8x8-inch square baking dish with parchment paper, ensuring the edges hang over the sides for easy removal later.

  2. Prepare the Wet Ingredients:   In a large mixing bowl, whisk together the sourdough discard, applesauce, honey, and vanilla extract until smooth and fully combined. Add the egg and whisk again until incorporated.

  3. Combine the Dry Ingredients:   In a separate bowl, sift together the cocoa powder, protein powder, baking soda, and salt. Gradually fold the dry mixture into the wet ingredients, stirring just until combined. Be careful not to overmix, as this can affect the texture.

  4. Add Optional Chocolate Chunks:   If desired, fold in ½ cup of chopped dark chocolate for an extra chocolatey boost. Save a few pieces to sprinkle on top of the batter for a decadent finish.

  5. Transfer to Baking Dish:   Pour the batter into the prepared baking dish, spreading it out evenly. Sprinkle the reserved chocolate chunks on top, if using.

  6. Bake:   Place the dish in the preheated oven and bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Avoid overbaking to ensure the brownies stay fudgy.

  7. Cool and Serve:   Let the brownies cool in the pan for about 10 minutes before transferring them to a wire rack. Slice into 10 squares for average size brownies. Enjoy!
