If you are looking for a creative and healthy meal, these Savory Italian Chicken Waffles are going to be your new high-protein favorite. Whether you’re meal prepping for a busy week or looking for a fun weekend brunch twist, these "chaffles" (chicken waffles) deliver a serious flavorful punch. By using almond flour and lean ground chicken, we keep these gluten-free and nutrient-dense, while the mozzarella and fresh herbs bring that classic Italian comfort we all crave.

The Ingredients for Savory Italian Chicken Waffles
1 lb Ground chicken
1 Large organic egg
1/4 cup Almond flour
2/3 cup Mozzarella (shredded)
1 tbsp Fresh basil (chopped) OR 1/4 cup packed spinach
1 tsp Italian seasoning
1/2 tsp Garlic salt
1/4 tsp Black pepper
1/4 tsp Onion powder
Red chili pepper flakes (to taste)
1 tbsp Organic extra virgin olive oil
1 tbsp Cold-pressed avocado oil (for cooking)
Step-by-Step Instructions
1. The Mix: In a large mixing bowl, combine the ground chicken, egg, almond flour, mozzarella, your greens (basil or spinach), seasonings, and the olive oil. Mix until everything is fully incorporated.
2. The Waffle Method (Our Favorite!): Preheat a mini waffle maker and spray it lightly with avocado oil. Roll a small ball of the mixture and place it in the center. Press down and let it cook for about 5 minutes or until the outside is golden brown and crispy.
Other Cooking Options
Don't have a mini waffle maker? No problem! These are incredibly versatile:
On the Stovetop: Heat avocado oil in a large nonstick skillet. Form the mixture into 2-inch patties and cook for 5 minutes per side.
Pro Tip: Resist the urge to flip them back and forth! Letting them sit undisturbed is the secret to that perfect golden-brown outer crust.
In the Air Fryer: Spray your air fryer basket well with olive oil. Place the patties inside (don't overcrowd!) and give the tops a quick spritz of oil. Air fry at 400°F for 10 minutes, flipping halfway through for an even crunch.

Serving Suggestions
These chicken waffles are delicious on their own, but they really shine when paired with a dipping sauce. Try them with a low-sugar marinara, maple syrup, or a side of fresh avocado. They also make a fantastic high-protein "bread" replacement for a breakfast sandwich!

I omitted the italian seasonings and added a bit of brown sugar and had these with maple syrup! So good!!!
