Cooled Coffee (Brewed):Ā 160g
Honey:Ā 25g
Bread Flour:Ā 250g
Salt:Ā 5g
Cinnamon Spice Filling
Cinnamon:Ā 3 tsp
Pumpkin Spice:Ā 2 tsp
Brown Sugar:Ā 80g
Step-by-Step Instructions
Step 1: Mix the Doughs
In a medium mixing bowl,Ā whisk together the active starter,Ā pumpkin puree,Ā water,Ā honey,Ā bread flour,Ā salt,Ā and pumpkin spice until a shaggy dough forms.
In a separate medium mixing bowl,Ā combine the active starter,Ā cooled coffee,Ā honey,Ā bread flour,Ā and salt until fully incorporated.
Cover both bowls loosely with a damp towel or plastic wrap and let rest for 30 minutes.
Step 2: Stretch & Fold
Perform 3 sets of stretch and foldsĀ on each dough,Ā spacing them 30 minutes apart.
To perform a set:Ā reach down under one side of the dough,Ā pull it up gently,Ā and fold it over the top.Ā Rotate the bowl 90 degrees and repeat on all four sides.
Cover both bowls between sets.
Step 3: Bulk Fermentation
Cover both bowls and let the dough bulk ferment at room temperature for 7 to 12 hoursĀ (depending on your ambient room temperature).
The dough is ready when it is visibly puffy,Ā jiggly when gently shaken,Ā and roughly doubled in size.

Step 4: Layer & Shape
Mix the cinnamon,Ā pumpkin spice,Ā and brown sugar together in a small bowl for the filling.
Gently stretch the pumpkin dough out on a lightly floured surface into a rectangle.
Stretch out the coffee dough to a similar size and layer it directly on top of the pumpkin dough.
Evenly sprinkle 1/3 of the cinnamon sugar mixtureĀ over the top layer.
Fold the right side of the dough over toward the center,Ā then sprinkle half of your remaining cinnamon mixtureĀ over the newly exposed folded section.
Fold the opposite (left) side over the top to create a long,Ā skinny rectangle,Ā then sprinkle the rest of the cinnamon fillingĀ across the top.
Roll the dough up firmly from the bottom to the top,Ā pinching the sides inward as you go.
Push and pull the rolled dough gently against your work surface to build outer tension,Ā shaping it into a smooth,Ā long oval.

Baking Tip:Ā Resistance is key to a high rise! Don't skip the push-and-pull shaping step on your work surface. Building strong outer tension on the dough before placing it in the pan prevents the loaf from flattening out as it bakes and helps maintain those distinct, tight swirled layers inside.
Step 5: Final Proof
Line a standard loaf pan with parchment paper.
Transfer your shaped dough seam-side downĀ into the prepared loaf pan.
Cover the pan with a towel and let the loaf rise for 1.5 to 2 hours,Ā or until the dough puffs up to reach the rim of the pan.

Step 6: Bake & Cool
Preheat your oven to 350°F (175°C).
Bake the loaf for 45 to 50 minutes,Ā until the top is golden brown and the loaf sounds hollow when gently tapped on top.
Remove from the oven and carefully transfer the loaf out of the pan onto a wire rack.
Let the loaf cool completely before slicingĀ to allow the crumb and spiced swirl to set properly!
