Ingredients (makes 10 gluten-free low carb pizza bombs)

  • 100g freshly shredded Dubliner or mozzarella cheese (~1 cup, lightly packed)

  • 1 oz cream cheese, softened (~2 tbsp)

  • 1 egg

  • 1 cup almond flour (~96g)

  • 1 tsp baking powder

  • 1 tbsp everything bagel seasoning (~10g)

  • 2 tsp marinara sauce (~10g, optional for filling)

  • 40g mini pepperonis (~1/4 cup)

Instructions

1. Preheat the Oven and Prepare the Baking Sheet:   Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set it aside.

2. Melt the Cheeses:   In a microwave-safe bowl, combine 100g of shredded Dubliner or mozzarella cheese (~1 cup) with 1 oz of softened cream cheese (~2 tbsp). Microwave in two 30-second intervals, stirring well after each to ensure the cheese is fully melted and smooth.

3. Mix the Dough:   In a medium bowl, combine the melted cheese mixture with 1 cup of almond flour (~96g), 1 egg, 1 tsp of baking powder, and 1 tbsp of everything bagel seasoning (~10g). Knead the dough with your hands until it forms a smooth, cohesive ball.

4. Shape the Dough:   Divide the dough into 10 equal portions. Flatten each portion into a small circle and arrange them on the prepared baking sheet.

5. Fill the Pizza Bombs:   Spoon about 2 tsp of marinara sauce (~10g total) and a few mini pepperonis into the center of each dough circle. Be careful not to overfill, as too much sauce will make sealing the bombs difficult.

6. Seal and Shape the Bombs:   Pinch the edges of each dough circle together to seal in the filling, forming a ball. Flip each pizza bomb over so that the seam is on the bottom, ensuring a smooth top surface.

7. Bake the Pizza Bombs:   Bake in the preheated oven for 12-14 minutes, or until the pizza bombs are golden brown on top and puffed up slightly. Allow them to cool for a few minutes before serving.
